Importance of seasoning blending

Impeller types, such as agitators, bowl mixers, and seasoning blenders, quickly mix liquid and powder seasonings with rotating blades. Cylindrical or drum types tumble raw materials, making them suitable for seasoning large volumes of fish without damaging the shape. V-type twin-shell mixers repeatedly split and recombine material as the vessel folds and opens, mixing powders very uniformly even when particle sizes and weights differ.

A vacuum mixer works by reducing pressure inside the vessel so air escapes from the raw material structure and seasoning. When pressure returns to normal, seasoning is drawn into the empty spaces, accelerating penetration. As a result, seasoning that would normally require long marination penetrates to the center in a short time, and drying or cooling may also be performed using the lowered boiling point under vacuum.

Selection criteria

Select a method based on raw material form, such as liquid, powder, or dry material; batch size; required seasoning penetration level; and ease of cleaning. Cylindrical types are advantageous for large-volume seasoning, V-type mixers for precise powder mixing, and vacuum types for enhanced flavor.
