Slicers, cutters, and filleting machines process raw materials such as squid, pollock, and vegetables into fillets of uniform thickness or strips of consistent width, improving yield and marketability. Depending on the purpose, the process is divided into filleting, strip cutting, and fine cutting.

Difference between filleting, strip cutting, and fine cutting

Filleting processes raw material into thin, wide sheets to maximize edible yield and is used for squid daruma fillets and pollock fillets. Strip cutting slices material into a consistent width to make shredded squid, while fine cutting cuts squid or octopus legs into small pieces for salted seafood products.

If fillet thickness is uneven, later drying, seasoning, and grilling stages cook differently, disrupting final product quality. For that reason, thickness uniformity in the cutting stage is the starting point for quality across the entire line. Raw material condition is also important: fresh materials are slippery and elastic, so stable holding is critical, while semi-dried or dried products break easily, making blade angle and speed control essential.

Multi-filleting and triple filleting machines hold raw material with compression rollers and produce uniform fillets to improve yield, while fresh-material filleting machines process fresh squid and pollock fillets thinly. Straight strip cutters slice squid and meat products into uniform strips, and fine cutters cut squid and octopus legs at regular intervals.

For vegetable lines, dedicated cutters such as green onion cutters are used to quickly cut green onions and other vegetables to a consistent thickness.

Selection criteria

Select equipment based on raw material, such as fresh or dried squid, pollock, or vegetables; target form, such as fillets, strips, or fine cuts; precision of thickness and spacing; and hourly throughput. Easy removal and cleaning of blades and rollers are also important for hygiene management.
