Rollers and presses are equipment that press and spread fish raw materials to make thickness uniform and expand the surface area, or beat the flesh to make it softer. Depending on the processing purpose, they are divided into pressing, expansion, and tenderizing processes.

What are pressing, expansion, and tenderizing?

Pressing is a process that passes raw material between rollers to control thickness uniformly, and expansion is a process that spreads pressed flesh wider to obtain a larger area from the same weight, increasing the expansion rate. Tenderizing physically loosens bundled muscle fibers by beating or pressing the raw material. When fiber bundles relax, tough texture becomes softer and seasoning and moisture penetrate more easily.

Fish fillet products such as daruma, pollock, cod, and filefish become thin, uniform, and soft finished products through this process. If pressed too much, the flesh tears; if pressed too little, it remains tough, so adjusting pressure and stages to match the raw material condition is essential.

Compression rollers individually control the speeds of the upper and lower rollers to achieve optimal expansion for each raw material. Three-, four-, and five-stage multi-stage rollers press step by step to maintain uniform quality regardless of thickness.

A tenderizer beats pollock fillets and dried pollock by machine, precisely tenderizing more than 1,000 fish per hour and preventing shrinkage after processing to improve product quality.
